Tufts of Happiness

Hello Lovely folks. 

Happy November!

It’s my birthday month!! So expect mainly baking recipes (that’s fair head’s-up I hope); you would love ‘em don’t worry 🤗

First up is the classic Chicken Puff. 

This mildly spiced Chicken Puff; when piping hot has a silky, molten bite highlighting the creamy sauce base & succulent chicken, once cooled the spices come forth in bursts of flavor to compliment the chicken.

Surprisingly as a kid this classic Chicken Puff was my least favourite; over the spiced Masala Chicken Puff or hearty Mutton Puff. As an adult I can’t rave over enough over the subtle flavor genius this modest Puff packs.


The fact that it’s easy to make; will have you pulling your oven mittens.

RECIPE

Time Taken: 1.5 hours (including baking time) 

Yield: 24 mini puffs

Method:

1) You need to thaw or defrost the Puff pastry sheets; I use store brought ones you can make your own.


2) Take about 300gms of boneless chicken salted, boiled and shredded. I velvet the chicken before cooking which gives a succulent meat flavor.


3) Chop 1 medium onion & 1 green chilli


4) Take 2tbsp butter and 2tbsp oil, saute the onions, chilli & 1tsp of ginger-garlic paste.


5) Add half cup of AP flour, cook till the flour is well roasted.


6) Add 1 cup of milk and make a white sauce. Make sure to whisk well so no lumps form.


7) Add the shredded chicken, half tsp white pepper, 1tbsp mayo and a pinch of nutmeg pd.


8) Mix well and let the mixture cool.


9) On a floured surface roll-out the puff pastry, using a frilled round cutter cut shapes to compliment your muffin pan size.


10) Pre-heat oven to 190 deg C.


11) Prep muffin pans by brushing with butter and sprinkle a bit of flour.


12) Place one round shape in the muffin pan and press gently to form a cup shape.


13) Spoon a heaped tsp of the filling in the center.


14) Place another round shaped puff pastry on top and with wet fingers to form a sort of pot pie.


15) Complete all puffs accordingly.


16) Brush with egg wash, place in a baking tray and bake for 20-30 mins.


17) Gently prise the Chicken puff out of the muffin pan.


18) Serve  warm with ketchup or go alacarte.
