Happy May Day everyone! Or Labour Day as commonly celebrated across the world. And to all my fellow Maharashtrians from India, a very Happy Maharashtra Day.
So many reasons and one occasion🤗.
And on this occasion the recipe I wanna share is truly depicting ' fruit of labour' - Dhaba style Chicken Curry
The unique spice mix powder of this curry is what sets it apart from the many Mughlai or Punjabi gravies which we are used to.
The credit for the spice mix is Chef Ranveer Brar; his recipe for same curry is where I picked my inspiration from. I have added a spice or two extra to my spice mix and the method of preparation is different than of Chef Ranveer.
Either way you make it, every Chicken Curry lover should try this recipe.
RECIPE
Time Taken : 2 hours
Yield : 4 servings
Method :
1) Marinate 300 gms of Chicken with 1tbsp ginger-garlic paste, 1tsp mustard oil, half tsp pepper pd. Let is rest overnight or max 4 hours.
2) Dry roast the following : 3 black cardamom, 6 green cardamom, 1 stick cinnamom, half tsp peppercorns, 1tbsp dhania seeds, half tsp jeera seeds, 2 cloves, half blade of mace, 2 cloves and pinch of salt. Cool and grind to a powder.
3) Heat 2 tbsp oil, add one black cardamom and half tsp jeera seeds saute well.
4) 2 medium onions finely chopped and cook till translucent. Add 1.5 medium tomatoes, and cook till soft.
5) Add half tsp each of : turmeric pd, kashimiri chilli pd and dhania pd. Saute and cook on low flame for about 3 mins.
6) Add the ground masala and sprinkle a bit of water to avoid letting it catch d bottom. Cook till fragrant, about 2 mins.
7) Add the chicken pieces and cook till the chicken turns opaque.
8) Add 1 cup water to the chicken marinated bowl to catch all the spices and then add to the chicken. Add half cup more water if needed. Stir well.
9) Bring the curry to a boil, and cook on low flame for 7 to 8 mins.
10) Add 2tbsp of fresh cream to the gravy and stir well.
12) Put off flame and garnish with chopped fresh coriander and fried green chillies.
For lunch I served this Dhaba style Chicken curry with a mild n silky Fried Spinach Rice (click for recipe); it tasted equally yum with Laccha parathas in the evening😉. On the side serve lemon wedges and raw onions.
