Conversation over coffee

Hello,

The weather is really pleasant past two days; there is a definite spring in my step as I go for my jog, breathing lungful of cool wind & admiring the green gardens around the beachfront.
The coffee addict in me of course loves the weather to sip my steamin cup of goodness in my tiny balcony, enjoying the morning view, with a perfect slab of Plum cake (part of the horde of goodies from home)

I couldn't help wondering last week how my goddaughter's christening cake had me flummoxed.
With not so much modesty like to admit I making smashing Christmas cakes, with generous helping of  spirits ;) as per reviews of my family & friends.
Over the years have managed self teach myself to decorate my cakes with traditional marzipan and, developed a fetish for purchasing cake decor equipments or weapons as I call them :)

Now the 'cake artist' engaged to prepare our Goddaughter's christening cake (we preferred a professional for the occasion) cancelled 3 days prior owing to Easter orders. With Easter around the corner it was gonna be impossible to find a cake artist in Mumbai to take an order.
Desperate times need, desperate measures so yours truly had to step in to make the Christening cake. Having taken commercial cake orders but occasionally, undoubtedly I had not only butterflies but whole cacophony of birds in my stomach.
My Mum is a wonderful baker & my inspiration for my love for baking, so needless to say she had all the basic ingredients & equipment for baking, yet emergency purchases had to be made for boards, boxes, ribbons and specific decoration moulds.
Choosing to stick to my specialty cake base of rich plum, my biggest concern was making it alcohol free but still moist. My rescuer was good old orange juice & caramel syrup. The decor process was nerve wracking - without the comfort of my own cake decor equipments, armed with simple tools from the kitchen like spoons & rolling pin (seriously not kidding), my first time working with sugar paste - but was accomplished with loads of encouragement from my family.

Below is a pix of my final product - a rich plum cake base, covered in sugar paste & marzipan decor.
 
Admittedly not a professional cake but it was labour of love & sat with pride on the central table in the party.
