Happy Somethings

Hello Lovely Readers

Happy New year greetings! We have left the tumultuous 2020 behind, whew😌!! 

Much as we want normalcy of simpler times, history of earlier pandemics tells us these things take at least 2-3 years to settle down😔. So yeah halt those reckless celebrations, it is not yet over. Do continue to take all the precautions🧤😷 as much as possible.

Despite the sombre mood, I am thankful & hopeful for good things to come in 2021 🙏🏼🤞🏼🤗. 

On my fav topic - food, I am enjoying my post festivities laid-back time. No fancy meals, or making elaborate desserts (in fact there is a gud bit of Christmas sweets still there). 

Resuming work after leave means our lunch menu has gone back to sandwiches, rolls, wraps, etc. And dinner's are lightweight but hearty meals to battle the super cold January🥶🧣🧥. 

For my first post of 2021, went through my un-published photos and got this super special Hazelnut Baileys Cake with Nutella Cream-cheese frosting.

Had made this cake for my baby brother's birthday last year. He was pleased with the flavour, of course he couldn't taste it, but we did😉. 

I love anything cake so it wasn't difficult for me to love it. But for my very picky hubby  what got him was; his love for Nutella & special liking for Baileys (especially over vanilla ice-cream). He even rated it in the top 3 new cakes I made last year😎. 

And I added another one in my boozy cakes list😍. 

RECIPE:

Time Taken: 90 - 120 mins

Yield: 6 inch cake

Method:

1) Pulse 60gms of roasted hazelnuts to a fine powder. 

2) Cream 120 gms of salted butter, with 180 gms of caster sugar.

3) Add 2 eggs, one at a time.

4) Sift 140 gms of flour with 1tsp baking powder. Mix the hazel pd. 

5) Add 1/4 cup of baileys and 1tsp vanilla essense to to the cake batter and whip for a few minutes. 

6) Fold in flour mixture gently. Keep it aside for half hour. 

7) Pre heat oven to 180 deg C. Grease the cake tin with butter and flour it. 

8) Pour cake batter on the tin. And bake for 30 to 40 minutes. 

9) Remove, cool and demould the cake. Once cooled cut it in 2 layers. 

10) Prepare a frosting of 60 gms of cream cheese, 3 tbsp of nutella, 1 tbsp of powdered sugar. 

11) Spread frosting on the layer in between and generously on the top. Decorate as you prefer. 

12) I had made a sunken treasure beach themed white chocolate decor. Obviously things which my brother loves. This cake stays well in room temperature for 2 to 3 days. It can stay beyond that but we demolishes d cake in 3 days😉

Anyway happy small starts to a great year ahead.
