Today is a special day, well is the birthday of the most beloved mother of all, 'Mother Mary'
Happy Feast, to each one of you & your families, may Mother Mary protect & bless everyone with health, peace and happiness!!
It also marks the end of the special 9-day novena prayer we follow which culminates on this joyous day. Have seen my parents follow these prayers piously ever since we were kids, although they have never imposed their preferences on us; their unshakable faith in our Mother Mary, inspired us to build the same spiritual bond, for which we are ever grateful. When I was in Mumbai, I used to attend these special 9-day prayers at the Church of Our Lady of Good Health, Irla; a suburb of Mumbai. The whole atmosphere of hushed prayers, calming waft of burning incense, the sweet smell of flowers/garlands, the warmth of candles; I love it all. Not to mention the food stalls outside selling festive delicacies ;)
As every other year, since I was a child, we have celebrated this day with pomp, so this will be no different. A full fledged celebratory dinner (since we were able to attend church only in the evening, post which we could enjoy the feast); comprising of Chicken Curry, with traditional 'fugias', Pulao, meat cutlets & for dessert have baked mini tarts - with lemon curd & chocolate filling.
Was my first time making 'Lemon curd' and I'm so damn excited with the results.
This recipe yields about a jarful of lemon curd, which can be refrigerated for future use. The best part about this recipe is you can make it the normal method in a double boiler or even in a micro-wave; being pressed for time used the latter.
You need 1/3 cup of fresh lemon juice, 1 lemon tested, 10-15 gms of melted unsalted butter, 1/2 cup sugar, 1 egg.
Mix all the ingredients, using a whisk, in a microwavable bowl. Place the bowl in microwave and cook for total 3-4 mins or till it starts thickening. At each 30 sec interval, stop & stir the ingredients to avoid lumping. Do note, the mixture tends to froth up in a boil, so make sure the bowl you use is deep enough. The lemon curd is ready when it thickly coats the back of a metal spoon. Splash in a pinch of vanilla sugar or drop of vanilla essence, to get rid of the egg odour; if any. Let it cool, before storing in a sterile glass jar. Can be used for tarts, pies, as frosting over cakes/cupcakes; choose your pick.
My family back home is visiting the Shrine Basilica of Our Lady of Good Health at Velankanni, seeing the pictures sent by them made me nostalgic of my visits there. We attended mass at our local church, where the festivities were no less & throngs of ardent devotees, wishing our Mother; made me feel no less at home. Post which we rushed home for our sumptuous dinner n dessert of course :D
As they day ends we couldn't be more thankful to our Mother Mary for her protection and blessings over our family.
