Open the tap & the words just gush out, now isn't that a writer's delight! Yes, I'm on a roll & there's no better way to begin the week.
Weekends generally churn out a lot of meat leftovers in our home, add to that a birthday meal and the pile is colossal. A stir fry, throwing in a few veggies is best next day lunch; but we have parents over & like any traditional Indians, they might be a tad uncomfortable to eat a meal minus the presence of an important side called rice/chapatti/bread.
While the dough was left to double, shredded the roasted chicken & added to the chicken mince, with a dash of crushed pepper & fresh coriander. In another bowl added the mutton mince, crushed a boiled potatoes & fresh coriander. Being leftovers, both the meat's were already seasoned with spices & salt; had no reason marinate it further. If you are beginning from scratch you may need to spice them up & cook them up with onion, garlic & green chillies.
After the dough had leavened after an hour, beat out all the air pockets, make lime sized balls, flatten them on your palm (size should be roughly the size of you palm) Place a tablespoon of filling in the center & lifting the dough sides, seal around the filling and roll lightly back to a ball, continue similarly for all the naan dough.
Roll out each stuffed dough ball to a thickness of a bhatura or paratha. On a floured surface, leave all these naan's for about half hour to rise up slightly. Roast each naan on a hot girdle/tava, liberally smeared with butter or ghee.
I served these smokin' hot naan's with a infusion of fresh yogurt mixed with coriander-mint chutney. Undoubtedly they were a hit, which of course makes me pen this post.
My leftovers are taken care off ;) I'm off to down them with some ice-cream, lemme know your thoughts on this recipe. Love to hear from you.

I had had a variety of minces both, chicken & mutton reductions (leftover from the puff pastry filling) & a few pieces of roasted chicken. Been wanting to make meat stuffed naan's from a long time, ever since we'd tasted the mouth-watering Arayes - a Lebanese dish made of ground meat stuffed in pitta bread & toasted to crisp perfection. Seeing the perfect occasion to bring my idea to fruition, I launched with full steam; especially elbow grease to knead the naan dough :D
