Rich, Dark & Sinful

Hello,

Rich, dark & sinful - that is how I like my coffee (now what were you thinking ;)

Coming from the Indian sub-continent I have never had fascination nor inclination for 'tea'; no offense to the beverage it's just that the smell of a strong milky tea makes me nauseous, don't know why; in spite of a belonging to a whole family of tea fanatics of varying degrees.

While 'tea' is awarded with my disinterest, 'milk' gets my detest (especially the tepid variety)
And rubbing my hand with glee, I know for sure many share this agony. However fate had other plans, I have made peace with my lactose war; ever since I succumbed to 'hyper-acidity'. It was like some twisted vengeance, my only salve against my acidity is milk, thankfully cold milk to be precise :D

Now coffee is my addiction; my obsession; my favourite poison!
My brain cannot function without my first cup of coffee in the morning, the conditioning runs so deep that not having it either develops a migraine or I'm at my worst grumpy/cranky behaviour.

I discovered my penchant for coffee during the long nights of studying in my college days; which my mum loving made for me to stay awake. It was always the instant variety of Nescafe, but for obvious reasons I threw up a fit if it was milky. My mum always admonished my choice of extra strong coffee, "it looks like black soot" she'd often mutter, yet relent and add my extra tsp of instant coffee.

Work happened early (right in my degree college days) so by the time I graduated, was already balancing a manger position in very much loved job. My ambitious self was so obsessed with growth, it propelled my to put a 12-14 hour work day, where I started my affair with machine bred cappuccino & the humble filter coffee (served by nightly angels; who benevolently haunt the streets at night when all food establishments are shut. Dishing out intoxicating coffee to night shift workers, from steel cans balanced precariously on nimble bicycles)

As positions grew, meetings & events in luxury hotels business bays were common, there I met my ultimate nemesis - black coffee. Nemesis cause, I'm a slave to it now. Nothing soothes my brains better than a cup of rich dark coffee. Ummm.... although for reasons of my acidity I have cut down to enjoying it once a week.
When we moved to UAE, I was delighted with the love of coffee here, I enjoy the traditional Arabic coffee with dates. Recently on a holiday in Rome I was delighted to taste 'Caffe' the ultimate espresso coffee, the experience was nothing short of reverential.

In my MBA days I had read the book 'Pour your heart into it' by Howard Shultz the co-founder of Starbucks. My love for coffee reached new heights, since then I'm fascinated to learn about different coffees & coffee making techniques. My kitchen is always stocked with instant coffee, as it's quick & easy for work mornings. On weekends I dabble with making the South Indian filter coffee (which hubby & me both love) I have the necessary filter coffee maker & now proudly have started my own collection of fresh ground coffee blends.

My perfect mug of morning coffee - 1.5 tsp of instant coffee, half tsp of sugar, half tsp of water. Stir with spoon for 30 secs (alternatively can use a milk frothing machine too) tp make a silky, creamy decoction of the coffee-sugar-water; lastly pouring in hot milk. Delicious till the last sip.


The adding of water to instant coffee is a lovely trick learnt from a friend, it is so sensible since anyone who has instant coffee knows that the coffee granules do not mix easily when directly added to milk, leaving clumps of coffee floating on surface. The water is a better solvent & brings the rich flavour without adding too many tsp of coffee powder if you like your coffee strong. Of course the milk frothing device is dispensable & a simple spoon can get the desired silky decoction, minus the froth.
