The mercury is rising and igniting everything in it's wake. Last week when I stepped down for my daily jog & was hit by a wave of balmy hot weather & I thought wryly, "Summer is here"
Ask anyone in this part of the world & their reaction to the arrival of summer will be similar or more dramatic than mine ;) Ah! well 6 months of purgatory begins, faster you accept, the better you adjust.
The singular positive of that fated evening was the blast of warm, salty ocean air that greeted me at the beach; now that made me crave for some fish in my menu.
So this weekend we made a trip to the local fishing port; my catch of the day - fresh prawns/shrimp & my favourite pomfret. Also I got to practice my haggling skills, which is important skill of Mumbaikars ;)
Like a kid who's been granted his favourite candy, I set yesterday evening for an preparing an elaborate fish curry accompanied by my showstopper - a hefty pomfret stuffed to perfection with green coconut chutney & fried crisp.....yummy!!
I'm still floating in my underwater coral reef heaven; imagine the one in 'Finding Nemo' his home reef :D
A good bit of coconut chutney is still stored away in my refrigerator, and my plans are to stuff it in some capsicum to accompany tonight's vegetable dish. I sincerely hope my chutney doesn't take offence to me stuffing it around; OK that was a bad pun!! Next time I promise to make amends & star it with dosa or medu vadas :D
My guide to the perfect Green Coconut Chutney.
1) One full coconut grated or diced, handful of fresh coriander, one inchful of ginger, 4-5 cloves of garlic, 2-3 green chillies, marble sized ball of tamarind, 1 tsp jeera/cumin seeds, 1/2 tsp turmeric powder & salt as per taste.
2) Blended all to a fine paste, squeeze half a lemon juice. Tada! Pride of the Konkan coast, coconut chutney is ready.

Coconut chutney is really yummy specially with dosa's and idli's. I think everyone should try this
ReplyDeleteThanks Mellita. Yes coconut chutney tastes good with good old south indian cuisine, my favourite way is simple chutney sandwich, with loads of butter ;)
